It's shows where our city came from and honors all the people who helped build our city up to what it is now. I LOVE the ball and being able to dance the night away with so many of my best friends, but I also LOVE the food. How can I possibly live without having shrimp 7 different ways in one weekend? Miss Mary Giroir on her maid experience: “Being a maid for the Shrimp & Petroleum Festival was truly a magnificent experience. As a maid you get to enjoy the festival that everyone in this town has grown to love in a completely different perspective. The entire involvement is something that I will never forget, you are exposed to many different things, that personally I did not even realize went on during festival weekend, and meet so many friendly, new faces.
