Today I learnt to make Zopf which is a kind of Swiss bread made with butter and braided from my Swiss neighbour Ruth Schar. Ingredients 1kg Zopfmehl 42g fresh yeast 500-600ml milk 125g melted butter warmed and add the milk in it too to make them the same temperature. 1tbs salt 1tbs sugar (optional) Make a paste of the yeast (hefe) with some of the milk. Add all the dry ingredients Make a well in the center and add the milk/butter mixture and the hefe paste. I used my kitchen Aid to mix with the dough hook. Mix on slow until it comes together well. Then mix by hand for another 2 minutes. Let it rest until double in size. Turn the oven to 200-degrees Make the braids. Divide the dough in half. Divide again and make 2 long rolls Put one over the other at the center and braid with 4 and tuck the ends under. Glaze with egg yolk and a drop of water. Put in the oven and bake for 30-35 minutes.
