Just back from attending a course in the UK - 3 full days filled with information and interaction. I've gained so much more insight into the complexity of cancer development, my head is still spinning. One thing didn't come as a surprise though - carrying around too much weight doesn't do us any good.

I'm off to the UK now, attending an advanced practitioner course for most of the week about CANCER and Nutritional Support before, during and after treatment and beyond. Can't wait, I'm all excited!!!

Coconut beneficial for digestive issues :-) Nutritional Benefits The caprylic acid in the coconut is a powerful antioxidant and has anitmicrobial, antibacterial and antifungal properties. It improves the absorption of calcium and magnesium and supports and aids immune function. Using coconut in the diet has also shown to improve the cholesterol ratio and protects the arteries from injury that causes atherosclerosis, therefore reducing the risk of heart disease. It has also shown to be beneficial in any kind of inflammatory conditions, especially of the gut, e.g. Ulcerative Colitis and Crohn's. Coconut milk is a rich source of calcium, potassium, and vitamins A and E. The flesh of the coconut is a rich source of protein. Coconut oil/butter comes usually in a jar (e.g. Dunnes, Supervalu, Health Food Shops) and can be used for cooking, stir-frying, in smoothies, desserts, as a spread or just on its own. Try this recipe for a nutritious high protein, gluten and dairy free coconut treat. 1 tablespoon of coconut oil 1 cup of almonds (soaked for at least 4 hours or overnight) 5 organic dates soaked in hot water to soften (or raw honey to taste) 3 tablespoons of raw cocoa powder Shredded coconut some dried goji berries (optional) Place all ingredients in a food processor. Roll into small bite size balls and roll into shredded coconut. Place in the refrigerator for 15 minutes to set.
