THIS TIME LAST YEAR Wowee I have some many emotions when I look at this photo. I was about 38 weeks pregnant and felt like I was going to POP! It was hot, I was hot and I couldn't wait to meet my little bubba! I actually really enjoyed being pregnant and had a really wonderful pregnancy. Of course I had times of tiredness and overwhelm - (being pregnant can be challenging at times) but generally felt amazing! I focused a lot of my time on eating well, exercising, spending time on my mindset (hello calm birth!) and taking the right supplements and I know all of this helped me along the way. CRAVING CHOCOLATE? HERE'S WHY It's usually around this time of the day that I desire something a little sweet - also called blood sugar o'clock, sweet cravings around this time could signal that your blood sugar levels are a little dysregulated so make sure you are having some good quality protein and healthy fats around lunch time. I also find in clinical practice that magnesium or iron deficiency can cause a craving for chocolate. If you must have chocolate try this easy recipe: melt 60gm of cocoa butter and two tablespoons of coconut oil. Add 1/2 teaspoon of vanilla powder, 1 tablespoon of raw honey and 1/3 cup of cacao powder and blend until well combined. Pour into chocolate trays and allow to cool until solid. Try adding some Himalayan salt, rose water or goji berries and flaked almonds for interesting flavour combos.

OMG HALLOUMI FRITTERS! These little morsels were an absolute hit in our house - even bubba (the biggest food critic in our house!!!) loved them. The gooey salty cheese paired with fresh zucchini, pea and corn were the perfect balance. You can serve these on their own as a snack, they are great as part of a breakfast and amazing with lamb cutlets. It's a super easy recipe: grate two zucchini and squeeze out as much liquid as you can (this is super important). Mix it in with one block of halloumi grated, half an onion grated, two eggs, 1/2 cup of spelt flour and some cooked corn and peas. Season with salt and pepper and roll into little balls and coat them with some spelt flour. Chill in the fridge for an hour and then fry in a pan until golden brown. You'll thank me later 😊
